I don’t know how many more times I could say “meat” in the title, but there is a point.
75% of my family doesn’t mind having meatloaf for dinner. There is one cute little 4 year old (soon to be 5) odd man out. As they say in a Christmas Story “every family has one”. It’s tough to get the guy to eat things but I’m not trying to pull a fast one him. I know if he tried half the stuff he doesn’t like, he like 25% of that and we’d be off to the races with a new menu.
Meatloaf is an issue for my son. Meatballs are not. Meatloaf is untouchable and unlookable. Meatballs are totally unstoppable. The little guy can eat an entire Subway meatball sub on his own.
So the obvious perfect storm of a solution to the meatloaf problem is meatloaf meatballs. I’m totally against fixing two meals when one is for the family and the other one is for the picky eater, but it doesn’t hurt me one bit to make 3 or 4 meatballs out of my meatloaf just before I throw it in the oven.
No extra work for me and a satisfied picky eating four year old at the other end of the table sounds like a double mommy treat to me!

I totally agree, making multiple meals out of one to satisfy the picker eater is an art!
