I have a 4 year old son who refuses to eat any fruits and vegetables- nothing. OK he will eat black olives on his pizza, but that’s about it. Recently, my husband gave me a fabulous cookbook that shows you how to sneak the most vitamin packed vegetables and fruits into your child’s cuisine without their even suspecting a thing. This sounds too good to be true and I have to admit I thought it was a joke present at first, but WOW IT WORKS!

Deceptively Delicious by Jessica Seinfeld is now my favorite cookbook. Yes, this is the wife of Jerry Seinfeld and she came up with this book after trying to get her daughter to eat healthy foods. The book is full of breakfasts, dips, main courses, side dishes and desserts that kids love.

Now my picky eater is now getting 3- 4 servings of vitamin packed veggies each day. He has no idea that his mac and cheese is actually whole grain pasta smothered in a sauce of low fat cheese and butternut squash. He doesn’t’ even bat an eye while eating sloppy joes made from red pepper, carrot, celery and ground turkey.

I haven’t even tried all of the recipes yet, but I’m thrilled he loves the few recipes we’ve tried out. Next week I’m going to sample a few of the desserts including chocolate pudding with AVACADO.
